Twice Baked Potatoes

Now that all the Christmas and New Years festivities have ended and most of the decorations are put away, and most of the cookies and candy are eaten and we're back to regular life, it's time to post another recipe.  Today is actually a twofer.  Twofer the price of one.  Which is pretty cheap considering all you have to do is read my ramblings.  I am posting basically the same item in two forms.  The good old fashioned twice baked potatoes recipe is one of those that I have had sitting in my recipe box for years.  One day out of desperation to add something new to dinner I tried it and it was an instant hit with everyone!  The casserole form is a new to me recipe I tried and was also an instant hit!  It would be a great recipe to make for someone who is sick or recovering from sickness or unable to cook for themselves.  I say that because as I was making it I was reminded of when my Honey's mom was so sick and we travelled to see her and she was very excited that a neighbor lady who knew we were coming had brought over a potato casserole and some other items to help with meals for us.  I thought that was nice and it really was very helpful.  I actually have pictures this time and since I have several, being that it's two recipes, I won't say a lot about the process.  For the twice baked potatoes, you begin with, of course, baked potatoes.  Once they are done baking you cut a small slice off the top and scoop the insides out into a bowl.






The remaining ingredients are stirred in and the potatoes are refilled with this very yummy mixture.




A little cheese is sprinkled on the top and they are placed back in the oven.  I like making these when we have guests over for dinner.




For the casserole version, I boiled potatoes and mashed them then added yummy things.




This is placed in a casserole dish.




It is baked then cheese is added to the top and it is baked a little longer.  Once done, onions and bacon are added.




The final outcome looks and tastes wonderful!

Twice Baked Potatoes


6 medium potatoes
1 (8 oz) sour cream
1 cup shredded cheddar - plus additional for topping
1-2 green onions, chopped
1 Tbsp. snipped parsley
1 tsp. salt
1/4 cup melted butter
1/4 cup whole milk


Bake potatoes at 400 degrees until done.  Approximately 50-60 minutes.  Cut thin slice off top and scoop out into bowl.  Mash potato pulp and add remaining ingredients.  Stir and place back into potatoes.  Top with cheese.  Place back into oven until cheese is melted and potatoes are warmed through.


Twice Baked Potato Casserole


8 medium baking potatoes, 4 pounds
1 (8 oz) cream cheese
1/2 cup butter, softened
1 cup sour cream
2 cups shredded cheddar (divided)
2 cloves minced garlic
1 tsp. salt
pepper to taste
6 slices bacon, cooked and crumbled
1/4 cup chopped green onions


Peel, slice and boil the potatoes until soft and easily mashed.  Drain and mash.  Add cream cheese, butter, sour cream, 1 cup cheddar, garlic, salt and pepper.  Stir well.  Spray baking dish with nonstick spray.  Place mixture in dish and bake at 350 degrees for 30 minutes until hot.  Sprinkle 1 cup cheddar over top and return to oven until the cheese melts.  Remove from oven and sprinkle bacon and onions over the top.
